A very simple salad


This is a salad that takes just a few minutes and it can be a light meal. Serves three portions as a main or six as a starter.



150 grms of pork steak or boneless chicken breast;
200 grms of lettuce (ideally use a combination of different types of leaves, but do not use iceberg lettuce, they are horrible);
3 tomatoes;
2 celery sticks;
2 red apples;
Olive oil;
Balsamic vinegar (use juice of lemon alternatively);
White wine;
Salt and pepper;

Cut the pork (or chicken) in squares and then fry it in a pan with very little olive oil. (If using the pork, make sure you remove the fat first). Add a bit of soy sauce and white wine. Let it cool down.

In a bowl, mix the lettuce, chopped celery and tomatoes cut in slices.

Remove the stem from the apples. Then peel the apples and cut them in slices (unless you have a Mike Jagger-size mouth, I suggest you cut the apple slices in half).

Add the apples to the salad bowl. Add the meat. Tip – add a bit of lemon juice to the apple to keep them from oxidising.

In an empty jar, mix three spoons of olive oil with one spoon of balsamic vinegar. You can use the juice of a lemon if you don’t have balsamic vinegar. Add salt and pepper to the sauce. Close the jar very well and shake (the jar) as if playing maracas! (Silly dance is optional).

Pour the sauce on the salad and mix with your hands (did you wash your hands before you started?).

Voila!

  1. Lovely recipe. One substitution I would use: coconut oil or ghee instead of olive oil to cook the meat. Olive oil is not recommended for cooking because it releases free radicals (cancer causing agents) when heated (even at very low temperatures).
