It’s a rainy Sunday afternoon. Although the thermometer says it is 14 degrees outside, it actually feels more like below zero. You are hungry. There is not much in the fridge and you can’t be bothered to get some take away. Well, here is a simple recipe for a soup that will hit the spot…
You will need:
1 onion
1 carrot
1 red chilli (if you are not a big fan of spicy food, use
half of the chilli)
1 can of chopped tomatoes (400 grams)
1 tbsp of tomato purée
200 grams of red lentil (brown lentil will do too)
1 litre of stock (preferably home made)
Olive oil
Salt and pepper
Chop the onion and throw in the pot with some olive oil. Let
the onion caramelise a bit in the oil before adding the carrot sliced and the
chilli chopped. Add the tomatoes followed by the tomato purée. Mix very well.
Add the lentils and the stock. Season with salt and pepper and bring to the
boil on high fire, mixing from time to time.
When it’s boiling, cover and let it simmer in low temperature for 25
minutes or so.
After that, use a food processor, liquidiser or blender in
order to get a creamy, semi-thick soup. Add more salt and pepper if you wish.
Serve with bread and enjoy.
